In case you are wondering what that delicious recipe is from my first blog post, here it is:
1 1/2 Cups all purpose flour
3 TBSP cocoa
1 Cup granulated, pure cane sugar
1 TSP baking soda
1/2 TSP salt
1 TSP White vinegar
1 TSP Pure vanilla extract
5 TBSP Vegetable oil
1 Cup water
Preheat oven to 350 degrees F.
Mix the first 5 ingredients in a greased 8″ square baking pan. Make 3 depressions in the dry ingredients – two small, and one large. Pour vinegar into one of the small depressions, and vanilla in the other. Pour the oil in the large depression. Pour water over all and mix until smooth.
Bake on middle rack of oven for 35 minutes, or until toothpick comes out clean. Cool. Top with your favorite frosting. Enjoy!
*Note: I doubled the ingredients in this recipe and made in a 9×13 pan. I mixed everything in the pan with a wire whisk. I substituted light olive oil for the vegetable oil. You could probably use applesauce or a combination of half applesauce and half oil. Instead of frosting, I dusted with powdered sugar.
